Breakfast Street Tacos w/ a Bite

Now if you’re like me, you CANNOT eat grits alone. Anytime I have grits, I at least need bread with it. I may be weird who knows, but these tacos are for you guys who may be like me. I love spicy foods so these do have a small bite to them but nothing major. If you want more spice, just increase the amount of Old Bay seasoning you use in the recipe. As always, you can add your own seasonings to make this your own. This is not really for the people who may be on the run (unless you use instant grits). This is more for the early birds who may want to read, listen to podcasts, watch tv, or relax and enjoy the morning. Try this recipe out and let me know how you like it!


  • La Banderita Street Taco Tortillas (3)
  • 2 eggs
  • Grits of your choice (I used old fashioned)
  • Old Bay seasoning
  • Salt
  • Pepper
  • Chipotle dressing
  • Fiesta cheese blend


  1. Start to boil water for grits
  2. Place grits in pot and cook to desired consistency (I used old fashioned so I cooked my grits for 10-15 minutes)
  3. Meanwhile, whip 2 eggs in bowl
  4. Scramble eggs in a nonstick skillet
  5. Season with salt and pepper
  6. When finished, sit to the side and keep warm
  7. Warm up tortillas in preferred method (I placed mine in hot skillet about 1-2 minutes per side)
  8. After warming up tortillas, your grits should ALMOST be finished (if using old fashioned)
  9. Add a pinch of salt
  10. Add a pinch of pepper
  11. Add 1 tsp of Old Bay seasoning
  12. Add 1/4 cup of fiesta blend cheese
  13. Stir until cheese is completely melted
  14. Now grab a plate!
  15. Place out 3 tortillas
  16. Add some chipotle dressing
  17. Evenly place scrambled eggs
  18. Place grits on top
  19. Garnish with desired toppings if you want
  20. Enjoy!
